Visa


1.5 hours of filling out & organizing + 10 copies of 5 different documents + 5 copies of visa applications + 5 notarized copies of college degrees + 5 passport photos + 2 online payments + 2 headaches + 1 frantic call to our visa service + 1 hour in UPS making copies + 1 tape gun cut on my thumb = visa paperwork sent off!

The stack of paperwork was about 1.5"-2" thick. So much paperwork, lots of time, & one sore thumb. We hear it should take 2-4 weeks once our papers get to them. We send everything to a visa service to have them make sure we sent everything correctly. They'll organize it appropriately and send it to the embassy. Pray for our sanity :) And that we did everything correctly so we can get them back quickly.

Cooking: Delicious Breakfast Casserole

I honestly don't know what to call this. I got the recipe a bit ago when I worked at the school board and needed a quick and easy breakfast dish. This is probably one of the absolute best breakfast recipes I've ever eaten... and that's not because I make it. Trey could eat the entire 9x13" dish if his stomach would let him.

ingredients:
1 lb. ground breakfast sausage
8 oz. cream cheese
shredded cheese (I use the prepackaged mix blend)
2 packages crescent rolls (Pillsbury seem to work best)
9x13" dish
Pam

instructions:
Brown sausage. Preheat oven 350 degrees (or whatever the crescent roll package says). Melt cream cheese in pan with sausage. Coat the sausage with the cream cheese. Spray Pam in dish. Put 1 can of crescent rolls in bottom of dish. Use fingers to push dough together, blending the "triangles". Evenly spread sausage cream cheese mix. Sprinkle with shredded cheese, as much as desired. Top with can of crescent rolls. Bake according to crescent roll package, or until brown.

The great part about this is you can prepare everything except the last baking. Put it in the fridge overnight & bake the next morning. You'll just need to bake a bit longer because it'll be cold.

Seriously, so easy & delicious.

Puzzle Time

We have very little hobbies in common. Actually, none really. Trey likes sports. I like to watch him play sports, but I don't like to watch sports. I could spend all day in a fabric store looking at gorgeous fabrics and Trey just sees another floral print. We're different. But that helps us to compliment each other. Since we've been spending so much time together, we wanted to find something we both enjoy doing. We found out we like puzzles. It's something we can work on together and we're competitive with each other in putting it together. We hit the jackpot here by finding a 750 piece puzzle for $4.99 of the Vancouver Skyline at night.

 We dumped it out and began to piece it together. Puzzles are one of those things that can sit and you can work on it as you have time. One day I was working on it, home by myself, and I began to think about my life in comparison to this puzzle. How everything I have been through is like a little tiny puzzle piece in my whole life. I started as a pile of mess. Pieces that were turned over, needing sifting and sorting. God did just that and continues to do that... just like when you put a puzzle together. It doesn't happen over night that all of our pieces are together.





The easiest part of the puzzle is to find the outer edges and piece them together. This becomes your framework. God starts with a framework, a foundation. Through salvation we find that foundation. And everything hinges on that foundation. Our life goes from a pile of mess to a puzzle being sorted out daily. We can't see the end picture of our life, but we know that the Father is perfecting us, just like we do a puzzle.

"For I am confident of this very thing, that He who began a good work in you will perfect it until the day of Christ Jesus." Philippians 1:6

As you continue to put together a puzzle, it starts to make sense. Pieces on the outside fit together. You're not sure exactly where they'll fit into the puzzle, but you know they go together. You begin to sort out pieces by similar colors and lines and shapes. I think this is a lot like our experiences. We go through things in our lives and some are easy, some are difficult, and some are extremely hard, but because of Christ we know God is working these things together for us. There are parts of life that seem difficult while we're in them, but looking back now I know they were easy in my spiritual walk. Things like understanding what it means to spend time daily in His word, or surrendering your future to Him once you graduate from high school. In light of all that I've been through in my 24 years on this earth, these were easy moments. God carries us through those moments and shows Himself faithful.

"And we know that God causes all things to work together for good to those who love God, to those who are called according to His purpose." Romans 8:28

Then we get to the difficult part of the puzzle. Where the pieces aren't so easy. They all look alike. You have no idea where they are going to go. Some of them are the pieces you've already fit together, just waiting for their specific spot. This is like those really difficult moments in life. So often the only thing we have to cling to is Jesus. And part of that is remembering those seemingly easy experiences and God reminding us how He carried us through. When I was a sophomore in high school, my only living grandparent, my Papa, had a stroke. I was so upset. He lived through it, but it wasn't easy on me. God brought verses and comfort in my life that carried me through that time. 

"Praise be to the God and Father of our Lord Jesus Christ, the Father of compassion and the God of all comfort, who comforts us in all our troubles, so that we can comfort those in any trouble with the comfort we ourselves receive from God." 2 Corinthians 1: 3-4 

Most recently my life has been a whirlwind of chaotic puzzle pieces. Sometimes I feel that there were pieces that seemed to be in place only to find out they were in the wrong place. God plucked them out and placed them where they fit exactly. When my mom passed away, there were moments when the only thing left in my "puzzle" was that foundation in Christ, those outer edges. God has been working in me these last 8 months (hard to believe it's been 8 months). I know I'm not that perfect puzzle yet. I know I still have a long way to go. But I am so thankful that I know the One who puts all of my pieces together. I'm thankful that each of those pieces of my life has a purpose.

Even tough we're not finished here on earth, our puzzle is! And it was a joyous celebration when it was done. We plan to frame it, hang it up here, and leave it for whoever comes behind us.

Cooking: Baked Spaghetti Deliciousness

Who doesn't love spaghetti? I mean, I know there are people that don't like it, but they're crazy, right? And even though I don't enjoy cooking, spaghetti is something I can make. It's not that hard. Especially when I can buy sauce in a jar. Trey had asked me if we could eat something normal for a couple of nights... said he liked my pinterest recipes I was trying, but just wanted something simple. So, one night we made spaghetti... but when there are only 2 people to cook for, we don't have to make the whole box of noodles or jar of sauce... so we just used what we needed. And I saved the rest for this delicious pinterest dish...




I've actually had it pinned for a while and must have forgotten about it because it's so incredibly easy... if I had remembered it before now I would have already made it twice. The actual recipe is called Baked Cream Cheese Spaghetti Casserole.. but that's too long. So I will call it Baked Spaghetti Deliciousness.

ingredients:
12 oz spaghetto
1 (28 oz) jar prepared spaghetti sauce
1 lb lean ground beef
1 tsp italian seasoning
1 clove garlic, minced
8 oz cream cheese
1/2 parmesan cheese, grated

instructions:

  • Preheat oven to 350 F degrees
  • Brown the ground beef, drain fat & stir in spaghetti sauce. Set aside.
  • Cook spaghetti, drain & place in bowl. Add cream cheese, Italian seasoning, & minced garlic. Stir until cream cheese is melted & spaghetti is thoroughly coated.
  • Lightly grease 9x13" dish. Spread a small amount of meat sauce in the bottom of the dish. Put spaghetti mixture on top & top with remaining meat sauce. Sprinkle cheese on top.
  • Bake for 30 minutes.
What I did different:
I didn't really measure everything by ounces or pounds... mainly because they use the metric system here unlike the system we use in the states. So I was dealing with milliliters & grams. I estimated everything (which I guess means I'm getting better at this whole cooking thing!). And I'm not sure what they mean by Italian seasoning, so I used a couple of "shakes" of onion salt & a couple of "shakes" of Adobo seasoning. AND I'm not sure what a clove of garlic is... is it the whole thing of garlic or one of the little pieces inside? If you can clarify, that would be great. I used one of the little pieces inside :) It all turned out wonderful. I will DEFINITELY be making this again, with all the changes I already made. The only other thing I would do differently is to set the cream cheese out a little earlier so it melts easier in the noodles.

This was a nice change to the normal spaghetti. Try it out :)

last couple of weeks

One of the awesome things about living in a big city is all there is to do here. Trey and I said the other day there hasn't been a part of Vancouver that we've been to that we wouldn't go back to. We celebrated our two-year anniversary about 1/2 a month ago and enjoyed that. We've spent our afternoons and weekends exploring our city. We have found some great "hole-in-the-wall" restaurants that we continue to return to. Here's some pictures to give you a glimpse into our life here!

Happiness vs. Joy

The other day in a bookstore I sat next to a girl reading a book about happiness. The book was about a lady who spent a year of her life looking for happiness. Each month she tried something different to find happiness... like working on her manners, or searching different religions, or trying a new hobby. It made me start thinking about people searching for happiness in our world. Everyone wants to be happy. It's part of a void we're searching to fill in our lives. I find happiness to be momentary, affected by situations. If I search for happiness, I only end up disappointed. I find that JOY on the other hand is so much more than that. I can be full of joy even in difficult situations.

Happiness is defined as the state of being happy. And happy is defined as delighted, pleased or glad, as over a particular thing. Joy on the other hand is defined as the emotion of great delight or happiness caused by something exceptionally good or satisfying. Joy is being satisfied, whether good or bad. I'm so thankful to have found joy in my relationship with my Savior. Searching through the Word there are so many references about joy. biblegateway.com finds 242 word finds in the NIV version. I am grateful for that joy that fills me. Romans 15:13 says, "May the God of hope fill you with all JOY and peace as you trust in Him, so that you may overflow with hope by the power of the Holy Spirit."

Talking about happiness with those who do not know the Lord is the perfect opportunity to share about the joy we have in Christ. I pray that I learned from this conversation with this girl how to share next time. I also pray I will be filled with His joy and not live momentarily, from situation to situation searching for happiness. And I pray you will do the same.
